    Shred or small dice the chicken.
  • Step 2
    Finely chop celery & red onion.
  • Step 3
    In a bowl, combine chicken, mayo, dijon mustard, red onion & celery. Season with salt & pepper. Mix it all together.

    Toast & halve a croissant. Scoop chicken salad onto one half of the croissant & close the sandwich. Enjoy!
