Shred or small dice the chicken. - Step 2
Finely chop celery & red onion. - Step 3
In a bowl, combine chicken, mayo, dijon mustard, red onion & celery. Season with salt & pepper. Mix it all together. - Step 4
Toast & halve a croissant. Scoop chicken salad onto one half of the croissant & close the sandwich. Enjoy!
