Ingredients for 1 meatloaf
1/4 lb
Ground chicken
2 oz
Mozzarella (fresh)
1/4 cup
Marinara sauce
1/8 cup
Bread crumbs (seasoned)

Yellow onion

Parmesan (grated)

Green beans (frozen)

- Step 1
Preheat the oven to 375°F. Peel & finely chop the onion. If needed, slice the mozzarella into 1/4 in pieces. - Step 2
In a large bowl, add the ground chicken, bread crumbs, chopped onion, egg & half of the parmesan cheese. Season with salt & pepper. For additional seasoning, add Italian seasoning, onion powder & garlic powder if you have! Mix until fully combined. - Step 3
Add the meatloaf mixture to a parchment paper lined sheet tray. Form the meatloaf with your hands to about 6 in long x 2 in wide. Top with marinara sauce & bake for 35-40 min. - Step 4
Meanwhile, reheat the garlic bread according to package directions. - Step 5
Remove the meatloaf from the oven. Top with the slices of mozzarella cheese, the remaining parmesan & additional breadcrumbs. Add the frozen green beans around the meatloaf. Drizzle with olive oil & season with salt & pepper. Place the sheet tray back in the oven & cook for 10-12 mins. - Step 6
Remove the sheet tray from the oven & slice the meatloaf. Serve with the garlic bread, green beans, additional marinara sauce & parmesan cheese. Enjoy!
