- Step 1
Preheat the oven to 425°F. Grease a sheet tray with cooking spary & arrange the chicken cutlets on the tray. Heat in the oven according to package instructions, for about 10. - Step 2
As the chicken heats, thinly slice fresh mozzarella into rounds. - Step 3
Remove the tray from the oven & spread marinara sauce on the cutlets. Layer on mozzarella cheese with a sprinkle of grated parmesan cheese if you have. Return everything to the oven & bake until the cheese is melted & bubbly, about 8 more min. (Pro-tip: use the broiler setting for the final 2 min of cook time to brown the top of the cheese!) - Step 4
Meanwhile, prepare a side salad by tossing mixed baby greens with balsamic vinegar, a drizzle of olive oil, salt & pepper. - Step 5
Thinly slice fresh basil (optional). - Step 6
Remove from the oven & transfer the chicken to a warm semolina roll. Spread more marinara sauce on top & garnish with fresh basil (optional). Close the sandwich, slice in half & serve on a plate with the side of greens. Enjoy!
