Crushed tomatoes

Peanut butter

- Step 1
Peel & finely chop the onions. - Step 2
Cut the chicken into bite-sized pieces. - Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the onions & sauté for 2-3 min. - Step 4
Add the crushed tomatoes. Stir & continue to cook for another 3-4 min. - Step 5
Add the broth & peanut butter. Mix well. - Step 6
Add the chicken, mix & continue to cook for another 8-10 min, until the chicken is cooked through and the sauce has thickened. - Step 7
Meanwhile, peel & grate the carrots. - Step 8
In a large bowl, add: the grated carrots, greek yogurt, lemon juice & a drizzle of olive oil. Season with salt & pepper to taste. Stir to combine. - Step 9
Heat the tortillas in the microwave or on a pan for 15 seconds to soften. Add the mafé chicken & the carrot mixture to the center of the tortilla & wrap tightly. - Step 10
Place the wraps seam-side down in a hot frying pan, over medium heat. Toast for 2 minutes per side, until golden & crisp. Slice the wrap in half & serve with a side of lettuce seasoned to taste. Enjoy!
