Preheat oven to 400°F. Cut the potatoes in half if they are large, otherwise keep them whole.
Chop the peppers into chunks.
Cut the sausages in thirds and prick holes in them them with a fork.
Add all the ingredients to an ovenproof dish. Season with salt and pepper and add a drizzle of olive oil and sprinkle some thyme. Mix well and bake for 30 minutes at 400°F.

Remove the dish from the oven. Serve and enjoy!
