Step 1

Cook the rice according to the package instructions.

Chicken breast

Cut the chicken into cubes.

Heat a drizzle of olive oil in a pan over medium-high heat. Add the chicken & a pinch of salt. Cook, stirring for 5 min.

Cucumber

While the chicken is cooking, slice the cucumber into ribbons, using a vegetable peeler.

To make the sauce, whisk together the coconut milk & peanut butter.
