Stovetop, Oven, Parchment paper, Skewers
Preheat the oven to 450°F. Cut the apricot in half & remove the pit. Cut the chicken into large cubes. Thread both onto the skewers, alternating between apricot & chicken.
Add the skewers to a parchment-lined baking sheet. Drizzle with oil & honey. Sprinkle with a pinch of dried herbs. Then season with salt & pepper. Bake for 15 min at 450°F.
In the meantime, prepare the salad. In a large bowl, add the lettuce, a drizzle of olive oil, vinegar, sliced almonds, another pinch of rosemary, salt & pepper. Toss to combine.
Remove the skewers from the oven. Serve over the bed of salad greens. Enjoy!
