Cheesy Chicken with Couscous & Veggies

Chicken breast
1 slice
Pepper Jack cheese (slices)
1/4 cup
Pearl couscous
1/2 cup
Baby bella mushrooms (whole)

Stovetop, Pot (large), Frying pan, Knife

- Step 1
Clean & thinly slice the mushrooms. - Step 2
Wash & slice the bell pepper into thin strips. - Step 3
Heat a drizzle of oil in a skillet on medium-high heat. Add the mushrooms & bell pepper. Season with salt & pepper. Stir & cook for 6-7 min, until the veggies are cooked & nicely browned. - Step 4
Meanwhile, season the chicken with salt, pepper & any other spices, we suggest onion powder & paprika. - Step 5
Remove the veggies from the pan & set aside. Add another drizzle of oil in the pan & add the chicken. Sear the chicken undisturbed on one side for 6-7 min. - Step 6
Meanwhile, add the couscous to boiling water & cook according to package directions. Season with salt, pepper & a drizzle of olive oil. - Step 7
Flip the chicken & cook on the second side for 5 min. Then, add the cheese overtop. Cover & cook for another 3-4 min or until the chicken is fully cooked through (internal temp reaches 165°F). - Step 8
Slice the cheesy chicken & plate alongside the couscous & veggies. Enjoy!
