- Step 1
Preheat the oven to 360°F. Peel & small dice the apples. - Step 2
Melt a dab of butter in a pan, over medium heat. Add the apples & a tablespoon of sugar, if you wish. Stir & cook for 2 min. Cover & leave to stew for 8-10 min, over low heat, until golden & lightly caramelised. Set aside to cool slightly. - Step 3
Mash the apples with a fork or potato-masher, until you obtain the rough consistency of applesauce. - Step 4
Meanwhile, prepare the egg wash. In a bowl, add: the egg yolk & 1 tablespoon of water. Whisk to combine. - Step 5
Once the applesauce has fully cooled down, spread the puff pastry out & cut it into 4 equal parts. Fill each quarter with the applesauce, leaving at least a 1/2" border. Bring the edges together & crimp tightly along the edges with a fork to seal. Cut a few slits into the dough (this allows steam to escape while baking) - Step 6
Transfer the apple turnovers to a baking tray lined with parchment paper. Lightly brush with the egg wash & top with a sprinkle of cane sugar. Bake in the oven for 30 min at 360°F. - Step 7
Once golden & crispy, remove the apple turnovers from the oven & serve with some vanilla ice-cream, if you wish. Enjoy!
