Be sure to follow the puff pastry package instructions! Preheat the oven to 400°F. Cut off the root & dark green leaves of the leeks. Slice the leeks into 2-inch pieces. Gently rinse them in a colander.
Melt the butter in a pan over medium heat. Add the sugar & leeks.
Let the leeks cook for 5 min.
Turn them over. Add the balsamic vinegar, salt & pepper. Reduce the heat to low, cover & cook for 7 min.
Line the baking dish with parchment paper.
Remove the leeks from the heat. Decoratively arrange the leek slices in the baking dish. Drizzle the pan juices over top.
Lay the puff pastry over the leeks. Fold in & crimp the edges to form a crust.
Pierce the surface of the dough with a fork. Bake the tart for 25 min at 400°F, or until golden brown.
Let it cool for 5 min. Then lay a serving plate over the dish. Hold it tightly in place as you swiftly flip over the tart. Serve & enjoy!
