Chicken thighs (bone-in, skin on)
1/4 lb
Fingerling potatoes
1/4 cup
Cherry tomatoes
1.5 oz
Mozzarella (mini)
1 tbsp
Balsamic glaze
optional
1/2 tbsp
Italian seasoning
optional
1 sprig
Basil (fresh)

- Step 1
Preheat the oven to 425°F. Line a sheet tray with parchment paper or foil. Pat the chicken dry with a paper towel & arrange on the tray, skin side up. Add potatoes. Sprinkle Italian seasoning on the chicken. Drizzle all over with olive oil. Toss to evenly coat. Season with salt & pepper. Roast in the oven for 25-30 min. - Step 2
Thinly slice the basil & set aside. - Step 3
Remove the sheet tray from the oven. Add the tomatoes & roast for an additional 10 min. - Step 4
Remove from the oven. Add mozzarella & drizzle the balsamic glaze over top. Garnish with sliced basil & serve! Enjoy!
