Peel & dice the potatoes. - Step 2
Add the potatoes to a pot of water. Bring to a boil, salt & cook for 15 min, or until fork-tender. - Step 3
Bring a second pot of salted water to a boil. Wash & trim the green beans. Add them to the pot & cook for 3-5 minutes. - Step 4
Once the potatoes are cooked, drain them. - Step 5
Pour the potatoes into a bowl. Add the milk, butter, salt & pepper. Mash & continue stirring until you've achieved a creamy purée consistency. - Step 6
Heat a pan over medium-high heat. Add a drizzle of oil. Pat the cod bone-dry, then add to the hot pan. Cook for 3-4 min on each side, or until cooked through. Serve over the potato purée & alongside the green beans.
