Stovetop, Blender, Pot (small), Peeler
Wash, peel & roughly chop the apple.
Slice the butternut squash in half. Scoop out the seeds & trim the ends. Then dice the squash.
Peel & dice the onion.
Melt a dab of butter in a pot over medium heat. Add the onion. Cook, stirring for 2 min.
Add the butternut squash & apple. Season with salt & pepper. Cook for 2 min.
When the squash is lightly browned, add enough water to cover the ingredients in the pot. Bring the water to a boil. Cover, reduce the heat to low & simmer for 15 min.
Cook until the squash & apple are fork-tender.
Purée with an immersion blender, blender or food processor. If the soup is too thick, add a bit of water.
Season with fresh ground pepper & serve!
