Hummus

Eggplant
1 tbsp
Sun-dried tomatoes
1 tbsp
Feta cheese (block)
1/2 handful
Arugula

- Step 1
Wash & slice the eggplant into thin rounds. - Step 2
Heat a drizzle of oil in a pan over medium-high heat. Add the eggplant. Season with salt & pepper. Cook for 2-3 min on each side. Transfer the eggplant to paper towels to drain. - Step 3
In the same pan, toast the buns for 1 min. - Step 4
Thinly slice or chop the sun-dried tomatoes. - Step 5
Spread hummus onto the bun slices. Then add the eggplant, tomatoes, feta & arugula to each sandwich. Top with a drizzle of olive oil. Season with salt & pepper. Close each sandwich with a top bun. - Step 6
