  • Step 1
    Toast the buns in a hot frying pan for 15 to 30 seconds with a dab of butter or drizzle of olive oil.
  • Step 2
    Finely chop the chives.
  • Step 3
    Whisk the eggs in a bowl and season with salt & pepper. Add the chives.
  • Step 4
    In a saucepan, over low heat, add 1/2 of the butter and the eggs.
  • Step 5
    Scramble the eggs using a spatula and mix until cooked through.
  • Step 6
    Add the remaining butter to the eggs and cook to your liking.
  • Step 7
    Add the scrambled eggs to the bottom bun and place the ham on top. Add the top half of the bun and enjoy!

    Eat alone or with a green salad.
