Stovetop, Pot (small), Immersion blender
Peel & chop the onion. Heat a drizzle of oil in a pot over medium heat. Add the onion. Cook, while stirring for 2 min.
Separate the broccoli into florets and cut the stem into cubes.
Add the broccoli to the pot and cook for 2 min. Then add 1 cup of water (per person) and season with salt & pepper.
Bring to a boil. Reduce the heat to low, cover & simmer for 15 min.
Add the cream and purée until smooth & creamy using an immersion blender, blender or food processor.
Add a little water if too thick.
Serve with a generous helping of crumbled blue cheese. Enjoy!
