Be sure to follow the pie crust package instructions! Preheat the oven to 400°F. Trim the green leaves & stem from the leek. Slice the leek into rings. Rinse them in a colander under running water.
Melt a dab of butter in a pan over medium-high heat. Add the leeks.
Season with salt & pepper. Then add the sugar. Cook, stirring for 5 min.
Lay the pie dough in a parchment-lined pie or tart pan. Pierce it several times with a fork. Pre-bake it for 5 min.
Add the balsamic vinegar to the leeks. Reduce the heat to low. Cook for 5 min.
In a mixing bowl, whisk together the eggs, milk, cream, salt & pepper.
Remove the pie crust from the oven. Spread the leeks evenly over the bottom of the quiche.
Pour in the egg-milk mixture. Arrange thin slices of brie over top.
Season with salt & pepper. Bake for 30 min at 400°F, or until the filling has set.
Let the quiche cool slightly before slicing. Serve & enjoy!
