Avocado

Raw shrimp

Soy sauce

Lime

1 tbsp
Cilantro (fresh)

- Step 1
Prepare the rice vermicelli noodles according to the package instructions. - Step 2
In a small bowl, whisk together the lime juice, soy sauce & a drizzle of oil. - Step 3
Peel the avocado & remove the pit. Slice the avocado. - Step 4
Season the raw shrimp with salt & pepper. - Step 5
Heat a frying pan over medium-high heat. Add a drizzle of oil. When hot, add the shrimp & cook for 3-4 min, or until cooked through. Remove from the heat. - Step 6
Drain the noodles & rinse with cold water to prevent sticking. - Step 7
Add the noodles to a serving bowl. Top with avocado slices, cooked shrimp & the soy-lime dressing. Garnish with fresh cilantro. - Step 8
Finish with chopped peanuts, a drizzle of sriracha sauce & lime wedges (optional). Serve & enjoy!
