Pesto & Sausage Tortellini Soup

Tortellini (cheese)

Italian pork sausage (ground)
2 tbsp
Pesto
1.5 cups
Veggie broth
1/4
Yellow onion
1 tbsp
Parmesan (shredded)

- Step 1
Peel & dice the onion. - Step 2
Heat a drizzle of oil in pot over medium heat & add the ground sausage. Break up the meat with a spatula & cook until slightly browned, about 4-5 min. Use a slotted spoon to transfer the meat to plate, reserving the fat in the pot. - Step 3
In the same pot, add the diced onion. Stir & cook until translucent, about 2-3 min. Add a splash of water to deglaze the pan then stir again. - Step 4
Stir in the pesto & mix it all together. Add back the cooked meat, then the tortellini & broth. Allow everything to simmer for 8-10 min, until the tortellini is al dente or cooked to your liking! - Step 5
Turn off the heat & stir in a bit of shredded parmesan for extra creaminess. Sprinkle some crushed pepper flakes on top, serve & enjoy!
