Mushroom Tortellini Soup

Baby bella mushrooms (sliced)

Chicken broth
1/2
Shallot

1 tbsp
Parsley (fresh)

- Step 1
Clean & slice the mushrooms. - Step 2
Peel & mince the shallot. - Step 3
Heat a drizzle of oil in a pot over medium heat. Add the shallot. Cook, stirring for 1 min. - Step 4
Add the mushrooms. Cook, stirring for 2 min. - Step 5
Add the chicken stock. (Or use a bouillon cube with water!) Reduce the heat to low. Cover & simmer for 5 min. - Step 6
Add the tortellini. Season with salt & pepper. Cook according to the tortellini package instructions. - Step 7
Serve the soup in bowls garnished with fresh parsley & parmesan (optional). Season with salt & pepper. Enjoy!
