Beet (cooked)
Lemon
Fresh goat cheese
Mint (leaves)
Cucumber

Step 1

Add the beets, cucumber, goat cheese, lemon salt & pepper to a blender. Add one cup of water (per portion) Optional: add some mint leaves

Step 2

Blend until smooth and creamy. Serve alone or top with croutons, sour cream or extra cucumber slices. Enjoy!
