Step 1
Preheat the oven to 400°F. Wash & dice the peppers.

Peel & dice the onions.
Step 3
Heat a drizzle of olive oil in a pan over medium heat. Add the onions & peppers. Cook, stirring for 3 min.

Add the ground beef & half of the enchilada sauce. Season with salt & pepper. Stir & cook for 3-5 min, or until the beef is cooked through. Remove the pan from the heat.
Step 5
Lay a tortilla on your work surface. Fill it with a dollop of sour cream & a spoonful of the beef mixture. Roll up the tortilla & place it into a baking dish. Continue with the remaining filling & tortillas. Be sure to arrange them snugly in the dish!
Step 6
Spread the remaining enchilada sauce over top. Sprinkle with grated cheese. Season with salt & pepper. Bake for 15-20 min or until heated through & melty on top. Enjoy!
