Stovetop, Pot (small), Frying pan
Cook or soak the rice noodles according to the package instructions.
Meanwhile, thinly slice the cucumber & set aside.
Wash the broccoli & cut into florets.
Cook the broccoli in a pot of salted boiling water for 5 min, or until crisp-tender.
Drain the rice noodles & rinse them under cold water.
Drain the broccoli & rinse under cold water.
Heat a drizzle of oil in a pan over medium-high heat. Add the steak. Season with salt & pepper. Cook for 2 min.
Flip the steak. Add the soy sauce, balsamic vinegar & sugar to the pan. Cook for 1-2 more min, basting the pan sauces over the steak while it cooks.
When the beef is cooked to your liking, remove it from the pan. Reduce the heat & let the sauce continue to reduce.
Slice the beef into strips.
Add the noodles, cucumber, broccoli, torn mint leaves & sesame seeds (optional) to a mixing bowl. Add the pan sauce, season with pepper & toss to combine.
Serve the noodle salad on a plate with the sliced beef over top. Garnish with few more mint leaves & sesame seeds (optional). Yum!
