- Step 1
Peel & cube the potatoes. - Step 2
Add the potatoes to a pot of salted boiling water. Cook for 10 min, or until fork-tender. - Step 3
Peel & mince the shallot. - Step 4
Melt a pat of butter in a pan over medium-high heat. Add the shallot & a pinch of salt. Cook, stirring for 3 min. Add a splash of water (or broth if you have it) to deglaze the pan. - Step 5
Mince the chives. Set aside. - Step 6
Once the liquid has evaporated from the pan, add the steak. Season the steak with salt & pepper (or add your favorite steak seasoning)! Cook undisturbed for 3-5 min each side, or until the steak is done to your liking. - Step 7
Drain the potatoes, reserving a bit of the cooking liquid. In a bowl, combine the potatoes, reserved cooking liquid, salt, pepper & a dab of butter. Feel free to season the potatoes up with your favorite seasonings (we love onion powder & garlic powder)! Mash with a fork or potato masher until smooth & creamy. - Step 8
Remove the steak from the pan. Leave the shallots over the heat. Add a dab of butter to the pan. Reduce the heat to medium-low. Cook, stirring for 1-2 min. - Step 9
Add the chives to the creamy mashed potatoes. - Step 10
Serve the mashed potatoes alongside the steak. Pour the shallot gravy over all. Bon appétit!
