Preheat the oven to 425°F. In a bowl, whisk together the orange juice, mustard & a drizzle of oil.
Slice the orange, rind on. Peel & slice the onion.
Rinse & drain the beans.
Place the chicken, beans, orange slices & onion in a baking dish.
Pour the orange-mustard sauce over top. Season with salt & pepper. Stir to combine. Bake for 35 min at 425°F.
