Oven, Pot (small), Stovetop, Peeler, Parchment paper
Preheat the oven to 350°F. Slice the orange & lemon.
Peel & finely slice the shallot.
Arrange the fish over half the sheet of parchment paper. Top the fish with shallot, salt, pepper & a drizzle of olive oil.
Add the sliced citrus & a splash of water. Season again with salt & pepper.
Close & seal the parchment paper packages. Bake for 20 min at 350°F.
Meanwhile, cook the rice according to the package instructions.
Remove the cod from the oven. Be careful of the steam when opening the packages! Serve the citrus cod over a fluffy bed of rice, spooning the citrus sauce over all. Enjoy!
