Oven, Pot (small), Stovetop, Peeler, Parchment Paper
Preheat the oven to 350°F. Wash the orange & lemon before cutting them into slices. Set aside.
Peel & finely slice the shallot. Set aside.
Place the fish on one side of a sheet of parchment paper. Top with shallot, salt, pepper & a drizzle of oil.
Add the slices of citrus, alternating between lemon & orange.
Close the parchment paper packet by folding it into a triangle, then folding in each of the 3 open sides. Repeat with the other cod packages. Bake for 10 min.
Meanwhile, cook the rice in a pot of salted boiling water according to the package instructions.
Remove the cod from the oven. Serve with the rice, spooning the citrus sauce from the packets over both. Enjoy!
