  • Step 1
    Cook the rice according to package instructions.
  • Step 2
    Meanwhile, peel & finely mince the shallots.
  • Step 3
    Prepare the meatballs. In a large bowl, add: the minced beef, eggs, shallots, bread crumbs & grated parmesan cheese. Season with salt & pepper. Mix everything together with your hands or a spoon until well combined.
  • Step 4
    Form meatballs about 1 1/2 inches thick & place them on a dish.
  • Step 5
    Place the meatballs in the air fryer basket & air fry for 10-12 min at 400°F, flipping halfway through, until golden brown & cooked through.
  • Step 6
    Remove the air fryer basket & add the marinara sauce. Stir & air fry for another 3-5 min at 390°F.
  • Step 7
    Serve the rice in a shallow plate with the marinara meatballs. Top with extra grated parmesan & re-season to taste. Enjoy!
