Apricots (fresh)
1/2 cup
Heavy cream
2 tbsp
Mascarpone
2 tbsp
Sugar (granulated)
optional
1/2 tbsp
Mint (fresh)
1 tbsp
Butter (unsalted)

- Step 1
Whip the heavy cream with an electric mixer. Be sure the cream & mixing bowl are very cold! Then add the mascarpone & a third of the sugar. Beat the cream again. - Step 2
Wash & cut the apricots in half. Remove the pits. - Step 3
Melt a dab of butter in a pan over medium heat. Add the rest of the sugar & stir. Arrange the apricots in the pan, flesh-side down. - Step 4
Cook the apricots for 4 min on each side, or until caramelized & golden. Add more butter or reduce the heat, if needed. - Step 5
Serve the apricots with dollops of whipped marscapone-cream. Garnish with fresh mint leaves (optional). Feel free to crumble your favorite shortbread cookie or biscuit over top. Enjoy!
