Preheat the oven to 400°F. Peel & thinly slice the red onion. Set aside. - Étape 2
Halve the cherry tomatoes & set aside. - Étape 3
Heat a drizzle of olive oil in an oven-safe frying pan over medium-high heat. - Étape 4
Add the ground chorizo & cook for 4-5 min, breaking it up with a wooden spoon as it cooks. When the chorizo is browned & cooked, transfer it to a bowl. - Étape 5
Add the onion & tomatoes to the skillet. Season with a pinch of salt. Cook until the tomatoes burst & onion softens, about 5-6 min. - Étape 6
Add back the chorizo & chickpeas (drained & rinsed) to the skillet. Mix to combine. Season with salt, paprika & pepper. Mix again. - Étape 7
Add a splash of water to the skillet (about 2 tbsp per serving). - Étape 8
Lay the salmon filets on top. Season with salt & paprika. Transfer to the oven & bake for 10-15 min at 400°F, or until the salmon is fully cooked. - Étape 9
Remove from the oven. Serve with lemon wedges & freshly chopped parsley if you have any. Enjoy!
