- Étape 1
Preheat the oven to 375°F. In a shallow bowl, mix together the ranch seasoning & bread crumbs. - Étape 2
Spread mayonnaise onto the top side of the chicken breast. Pick up the chicken & place the mayonnaise side down onto the bread crumb mixture. Add the chicken breast (bread crumb side up) onto one side of a parchment paper lined sheet tray. - Étape 3
Add a drizzle of olive oil onto the other side of the sheet tray. Add baby potatoes & toss to coat them in the oil. Season the potatoes with salt & pepper. Add an additional drizzle of oil over the potatoes & chicken. Roast in the oven for 35-40 min or until the chicken & potatoes are fully cooked. - Étape 4
Serve the chicken & potatoes with the salad & ranch dressing on the side. Enjoy!
