Jasmine rice (cooked)

- Étape 1
Pat the tofu dry & cut into bite-sized cubes. - Étape 2
In a skillet on medium heat, add the coconut flakes. Stir constantly for 2-3 min or until the coconut lightly toasts. Add the coconut to a bowl & set aside. - Étape 3
In the same pan, heat a drizzle of oil on medium-high heat. Add the tofu & fry on both sides for 3-4 min each until golden brown. Remove the tofu & set aside. - Étape 4
Add the frozen veggies to the pan with the sambal oelek chile sauce, brown sugar & soy sauce. Cook for 3-4 min or until the veggies are heated through. - Étape 5
Add the coconut milk & simmer for 1-2 min until the sauce is thick & bubbly. Add the tofu back into the pan & stir everything together. Cook for another 2 min, then remove from the heat. - Étape 6
Heat the rice according to package directions. - Étape 7
Plate the rice & top with the tofu stir fry. Add the toasted coconut on top & serve. Enjoy!
