Cook the rice according to the package instructions. - Étape 2
Quarter the lime into wedges. - Étape 3
Rinse, dry & roughly chop the cilantro. - Étape 4
Keep an eye on the rice & adjust the heat as needed! - Étape 5
Pat dry the chicken with a paper towel. Season both sides with salt, pepper & coriander. - Étape 6
Heat a drizzle of oil in a pan over medium-high heat. Add the chicken. Cover & cook for 4-5 min on each side, until it's fully cooked. - Étape 7
Fluff the cooked rice with a fork. - Étape 8
Slice the chicken breast & serve over a bed of rice. Garnish with cilantro & lime juice. Enjoy!
