Cheesy Chicken with Rice & Veggies

Clean & thinly slice the mushrooms. - Étape 2
Wash & slice the bell pepper into thin strips. - Étape 3
Heat a drizzle of oil in a skillet over medium-high heat. Add the mushrooms & bell peppers. Season with salt & pepper. Stir & cook for 6-7 min, until the veggies are cooked & nicely browned. - Étape 4
Meanwhile, season the chicken with salt, pepper & any other spices, we suggest onion powder & paprika. - Étape 5
Remove the veggies from the pan & set aside. Add another drizzle of oil in the pan & add the chicken. Sear the chicken undisturbed on one side for 6-7 min. - Étape 6
Flip the chicken & cook on the second side for 5 min. Then, add the cheese overtop. Cover & cook for another 3-4 min or until the chicken is fully cooked through (internal temp reaches 165°F). While the chicken finishes cooking, heat the brown rice according to package directions. - Étape 7
Plate the chicken with the veggies & brown rice. Season to taste & enjoy! :-)
