Thaw the frozen peas. - Step 2
Wash & trim the zucchini. Use a veggie peeler to peel the zucchini into long ribbons. Roughly chop the cilantro. - Step 3
Add the peas, zucchini, arugula & cilantro to a salad bowl. Top with a squeeze of lemon juice, a drizzle of oil, salt, pepper & crumbled feta. Enjoy!
