White Bean & Garlic Soup

Parmesan
1.3 cups
Veggie broth

Rosemary (dried)
1/2 clove
Garlic
3/4 cup
Cannellini beans (cooked)

- Step 1
Peel & mince the garlic. Heat a drizzle of oil in a pot over medium heat. Add the garlic & rosemary. Cook, stirring for 3 min. - Step 2
Rinse & drain the beans. Add them to the pot. Pour in the vegetable stock. Stir to combine. Reduce the heat to low, cover & simmer for 8 min. - Step 3
Toast a couple slices of baguette (per person) in a toaster. - Step 4
Ladle the soup into bowls. Lay the toasts over top. Garnish with parmesan & a drizzle of olive oil. Season with salt & pepper. Enjoy!
