  • Step 1
    Cut off the watermelon rind. Chop the watermelon into chunks, removing any seeds.
  • Step 2
    In a small bowl, whisk together the vinegar, salt, pepper & a drizzle of olive oil.
  • Step 3
    Arrange the arugula on a serving plate. Top with the cubed watermelon & crumbled feta cheese. Garnish with pine nuts (optional). Pour over the dressing. Enjoy!
