- Step 1
Wash the pepper & remove the seeds. Thinly slice. - Step 2
Trim the zucchini ends. Halve lengthwise & halve each piece once more. Cut into 2 inch pieces. - Step 3
Peel & thinly slice the onion. - Step 4
Heat a drizzle of oil on a skillet over medium-high heat. Add onions, peppers, zucchini & taco seasoning. Stir & cook 7-9 min until nicely caramelized. Remove from the heat. - Step 5
Build the fajitas! Add sizzling veggies to warm tortillas. Top with crumbled cotija cheese & a dollop of sour cream. Enjoy!
