Veggie Skewers with Couscous

Cherry tomatoes

Zucchini
1/4
Red onion
1/4 cup
Couscous
2 tbsp
Greek Yogurt (plain)

1/2 tsp
Oregano (dried)

- Step 1
Preheat the oven to 425°F. Peel & quarter the onion, separating the petals. - Step 2
Wash & cut the zucchini into rounds. Wash the baby tomatoes. - Step 3
Slide the zucchini, cherry tomato & onion onto the skewers. Continue alternating & repeating until all the skewers are full. - Step 4
Place the skewers on a parchment-lined baking sheet. Season with salt & pepper. Drizzle with olive oil. Add a pinch of oregano. Roast for 20 min. - Step 5
Cook or soak the couscous according to the package instructions. - Step 6
Remove the skewers from the oven. - Step 7
Serve the skewers over the fluffed couscous. Add a dollop of Greek yogurt alongside. Season with salt & pepper. Enjoy!
