  • Step 1
    Peel & mince the onion.
  • Step 2
    Peel the avocado. Remove the pit. Scoop out the flesh & place into a bowl.
  • Step 3
    Season with salt & pepper. Add a squeeze of lime juice. Mash the avocado with a fork.
  • Step 4
    Spread the avocado & sour cream over half of each tortilla.
  • Step 5
    Top with the cheese & red onion. Fold each tortilla in half.
  • Step 6
    Place a pan over medium heat. Cook the quesadillas for 2 min on each side, or until the cheese is melty.

    Slice into wedges.
  • Step 8
    Serve with salsa & any leftover guacamole. Add a few drops of your favorite hot sauce for a kick!
