Gnocchi

2 handfuls
Spinach (fresh)

1/4 cup
Sun-dried tomatoes

2 tbsp
Parmesan (grated)

1/4 clove
Garlic

1/8 cup
Heavy cream

1/4 tsp

- Step 1
Heat a drizzle of olive oil in a skillet over medium-high heat. Add the gnocchi & cook for 2-3 min, stirring occasionally. Cover, turn heat to low & continue cooking for 2-3 more min. - Step 2
Meanwhile, drain & slice the sun-dried tomatoes into thin strips. - Step 3
Check the gnocchi for doneness. Once golden brown & tender, set them aside. - Step 4
In the same pan, heat a drizzle of olive oil over medium heat. Grate in the garlic & sauté for 30 sec, stirring. - Step 5
Add the sun-dried tomatoes, heavy cream & grated parmesan. Season with pepper & cook for 2-3 min, stirring occasionally. - Step 6
Add the Italian seasoning & spinach. Mix well & continue cooking until the spinach has wilted, 1-2 more min. - Step 7
Add the gnocchi to the pan & cook for 1-2 min, stirring often to combine everything well. Remove from heat. - Step 8
Serve the Tuscan gnocchi on a plate. Sprinkle with grated parmesan (if you have any leftover) & season to taste. Enjoy!
