  • Step 1
    Preheat the oven the 350°F. Cut the ends off the eggplant & slice into thin rounds.
  • Step 2
    Cut the ends off the zucchini & slice into thin rounds.
  • Step 3
    Thinly slice the tomatoes.
  • Step 4
    Peel & very thinly slice the onion.
  • Step 5
    Grease a round baking dish with butter or olive oil. Smear crushed garlic over the bottom of the dish.
  • Step 6
    Arrange the vegetables in an upright position in the dish, alternating them in a circular pattern.
  • Step 7
    Drizzle with olive oil. Season with thyme, salt & pepper. Bake for 50 min at 350°F.
  • Step 8
    Remove from oven. Serve with joy!
