Preheat the oven the 350°F. Cut the ends off the eggplant & slice into thin rounds. - Step 2
Cut the ends off the zucchini & slice into thin rounds. - Step 3
Thinly slice the tomatoes. - Step 4
Peel & very thinly slice the onion. - Step 5
Grease a round baking dish with butter or olive oil. Smear crushed garlic over the bottom of the dish. - Step 6
Arrange the vegetables in an upright position in the dish, alternating them in a circular pattern. - Step 7
Drizzle with olive oil. Season with thyme, salt & pepper. Bake for 50 min at 350°F. - Step 8
Remove from oven. Serve with joy!
