  • Step 1
    Cook the rice according to the package instructions.
  • Step 2
    Drain & press the tofu dry with a tea towel or layered paper towels. Cube the tofu. In a small bowl, combine the tofu & soy sauce. Set it aside to marinate.
  • Step 3
    Wash & thinly slice the cucumber.
  • Step 4
    Peel the avocado & remove the pit. Thinly slice the avocado.
  • Step 5
    Spoon the cooked rice into serving bowls. Top with the tofu-soy sauce mixture.
  • Step 6
    Arrange the avocado & cucumber slices over the tofu.
  • Step 7
    Add dollops of coconut yogurt.
  • Step 8
    Garnish with chopped cilantro & a sprinkle of sesame seeds (optional).
