Broccoli (fresh)

White mushrooms (whole)

1/8 cup
Coconut milk

1 cup
Veggie broth

1/2 tsp
Ginger (fresh)

1/4 clove
Garlic

1/2 tbsp
Soy sauce

- Step 1
Heat a drizzle of oil in a pot over medium heat. Add the minced garlic & ginger. Cook for 1 min. - Step 2
Add the vegetable broth & bring to a boil. - Step 3
Wash & cut the broccoli into small florets. Clean & slice the mushrooms. - Step 4
Once the stock is boiling, add the broccoli, mushrooms & coconut milk. - Step 5
Season with salt & pepper. Cover & cook for 8 min. - Step 6
Remove from heat. Add the soy sauce. - Step 7
Serve garnished with fresh cilantro leaves (optional). Enjoy!
