Tuscan Salmon Pasta

Pasta (pappardelle)

Salmon (fresh)
1/4 cup
Sun-dried tomatoes
2 tbsp
Heavy cream
1.5 handfuls
Spinach (fresh)
1/2 clove
Garlic

- Step 1
If using frozen salmon, defrost beforehand. Heat a drizzle of oil in a pan over medium heat. Add the salmon. Cook for 2 min. - Step 2
Cook the pasta according to the package instructions. Drain & set aside. - Step 3
Turn over the salmon. Cook for 2 min. Remove from the pan & set aside. - Step 4
Coarsely chop the sun-dried tomatoes. - Step 5
Mince the garlic. Heat a drizzle of oil in the same pan. Add the garlic & cook for 30 seconds. - Step 6
Add the sun-dried tomatoes, spinach & a few splashes of water. Cook until the spinach has barely wilted. - Step 7
Add the cream. Reduce the heat to low & simmer for 1-2 min. - Step 8
Add the drained pasta, salmon, salt & pepper. Stir it all together. Serve & enjoy!
