  • Step 1
    Cook the rice according to the package directions. (Or use leftover rice!)
  • Step 2
    Peel & dice the onion.
  • Step 3
    Heat a drizzle of oil in a pan over medium-high heat. Add the onion. Sauté for 3-5 min.
  • Step 4
    Add the turmeric & tomato paste. Season with salt & pepper. Mix to combine.
  • Step 5
    Add the rice & stir.
  • Step 6
    Season again with salt & pepper. Stir & flatten the rice with a spatula as it cooks.
  • Step 7
    Let cook for 2 min.
  • Step 8
    Stir the rice & flatten again. Cook for 1-2 more min, until it's slightly browned & crisp.
  • Step 9
    Serve the rice topped with a drizzle of yogurt & fresh mint leaves. Enjoy!
