Tomato Soup with Grilled Cheese

1/2 cup
Tomatoes (canned, peeled)
1/4
Yellow onion
1 cup
Veggie broth

Garlic powder

1 tbsp
Heavy cream

Mozzarella (shredded)

Cheddar (shredded)
2 slices
White bread (sliced)

Basil (fresh)

- Step 1
Peel & mince the onion. - Step 2
Heat a dab of butter in a pot over medium heat. Add the onion. Cook, stirring for 3 min. - Step 3
Add the tomatoes, garlic powder & vegetable broth. Cover & simmer for 10 min. - Step 4
Butter the outside of each slice of bread. - Step 5
Turn the slices over. Fill half of the slices with cheese. Close each sandwich, being sure the buttered sides are facing outward. - Step 6
Heat a pan over medium heat, grill the sandwiches for 3 min on each side, or until the cheese is melty & the bread golden. Keep warm while you finish making the soup. - Step 7
When the soup is finished simmering, season it with salt & pepper. Purée it using an immersion blender, blender or food processor. It should be completely smooth & creamy. - Step 8
Serve the soup garnished with cream & basil leaves (optional). Dip in your grilled cheese & enjoy!
