- Step 1
Peel & dice the onion. - Step 2
Heat a dab of butter in a pot over medium heat. Add the onion. Cook, stirring for 3 min. - Step 3
Add the vegetable broth to the pot. - Step 4
Add the tomatoes, basil & garlic powder. - Step 5
Season with salt & pepper. Cover & simmer for 10 min. - Step 6
Add cream (optional). Purée the soup using an immersion blender, blender or food processor. It should be completely smooth & creamy. - Step 7
Serve the soup garnished with cream (optional) & fresh black pepper. Enjoy!
