  • Step 1
    Peel & chop the onion.
  • Step 2
    Peel & mince the garlic.
  • Step 3
    Peel & chop the carrots.
  • Step 4
    Heat a drizzle of oil in a large pot over medium heat. Add the onion, carrots & garlic. Cook, stirring for 2 min.
  • Step 5
    Add the tomatoes, water & dry quinoa. Season with salt & pepper. Stir to combine.
  • Step 6
    Reduce the heat to low. Cover & simmer for 15 min.
  • Step 7
    Serve the soup garnished with crumbled feta & fresh parsley (optional). Enjoy!
