2 slices
White bread (sliced)

2 oz
Mozzarella (fresh)

1/2
Tomato

1/2 handful
Arugula

1/8 cup
Pesto

1 tbsp
Basil (fresh)

1 tsp
Pine nuts

- Step 1
Wash & slice the tomato. - Step 2
Thinly slice the mozzarella. - Step 3
Spread the pesto over each slice of bread. - Step 4
Top half of the bread slices with tomato. Layer the cheese over top. Add pine nuts & basil (optional). - Step 5
Season with salt & pepper. Add the arugula. Close the sandwiches. - Step 6
Melt a dab of butter in a pan over medium heat. Add the sandwiches. Cook for 2 min on each side. Use a spatula to press the sandwiches down as they cook. They should be melty & golden brown. - Step 7
Cover the pan & remove from heat. Let the cheese melt for 1-2 min. - Step 8
Cut the sandwiches in half or thirds. Serve hot & enjoy!
