Cream cheese
1/2 handful
Arugula
1/2 cup
Cherry tomatoes

- Step 1
Heat a drizzle of olive oil in a pan over medium heat. Wash the tomatoes. Add them to the pan & cook for 5 min. - Step 2
In a small bowl, whisk together the eggs, salt & pepper. - Step 3
When the tomatoes are done, remove them from the pan. Keep the pan hot. - Step 4
Add a drizzle of olive oil to the same pan. Pour in the eggs. Cook for 1–2 min. - Step 5
Add dollops of cream cheese & the tomatoes. Sprinkle the arugula over top. - Step 6
When the eggs are cooked through, serve & enjoy!
