  • Step 1
    Heat a drizzle of olive oil in a pan over medium heat. Wash the tomatoes. Add them to the pan & cook for 5 min.
  • Step 2
    In a small bowl, whisk together the eggs, salt & pepper.
  • Step 3
    When the tomatoes are done, remove them from the pan. Keep the pan hot.
  • Step 4
    Add a drizzle of olive oil to the same pan. Pour in the eggs. Cook for 1–2 min.
  • Step 5
    Add dollops of cream cheese & the tomatoes. Sprinkle the arugula over top.
  • Step 6
    When the eggs are cooked through, serve & enjoy!
